High Rise Apple Pancake

2 eggs slightly beaten
½ cup flour
½ cup milk
pinch of salt

Combine eggs, flour, milk and salt. Beat until smooth. Heat ovenproof
skillet in a 450 oven until very hot. Coat with melted margarine and immediately
pour in batter. Bake on lowest rack for 10 minutes. Reduce heat to 350 and
continue baking until golden brown no more than 10 minutes. Serve with warm
apple slices or fresh strawberries or powder sugar.
